You can't actually pick a deer species In Game, but you can pretend that your deer is whatever species you'd like. I think there is a grey pelt that you could wear, that might help.
You can not actually "Be" a gray brocket in-game. You can't change your in-game deer's species, but you can make a biography on this community site and just say your deer is supposed to be seen as a gray brocket.
somebody can cast a pelt spell on you until you get the gray pelt.
those small deer you saw were mini deer, which are just adult deer wearing a mini spell.
To get the pelt you must get someone to cast a pelt spell on you, usually it takes a few tries to get the pelt you want.
Same with being a mini deer, someone must cast an animal spell - which they get when sleeping in a mushroom circle - on your deer. n_n
